Cervelo S3 proper wheelset

I'd like to complement my S3 with Flo wheels. I'm torn between 60/60 or 60/90; also between the Standard/Clydesdale bearings. I am a road rider enthusiast, (no racing anymore, 70 years young) I just participate on a few charitable events. I put about 1,200 miles a year and weight 170lbs. Should I worry with truing often with the standard bearings?
I know I don't need them but I just like the damn looks of the 60/90 combo, besides, I won't have to hear the wife complaining about the price that much.
Almost forgot, any issues fitting with the S3? What are the recommendations for tires and tubes?

I have a 2014 Cervelo S3. I have the Flo 60's on the front and back. I didn't want to use a valve extender so I opted away from the 90.

Love the ride and performance.
